MOTO: Two dessert courses to go

Two dessert courses yet remain. The first of these is quietly placed before you.

There is a square plate of white porcelain that bears a white ramekin and a second tiny white plate. The ramekin sits close to you on the larger plate, filled with swelling khaki foam, fallen in the middle under the weight of dozens of little white balls. The tiny plate sits off in the far corner and cradles something that looks suspiciously like a styrofoam packing peanut.
