My new recipe
May. 22nd, 2007 11:15 pmMy first class is over! Yaay! I have a breather for a few days before the next. Work is under control, for the moment, too. And thus, I cook.
A dear friend is very under the weather, so I volunteered to make soup (yes, same friend). She's sick, so of course, it must be chicken noodle soup. Rummaging through my freezer, I find a half-gallon (roughly 2 liters to you,
stephantasy) of stock from my Christmas turkey. That's close enough to chicken for emergency rations, so I pull it out of deep storage. That particular stock is a touch sweet, as that turkey was brined in dark beer.
On top of the turkey stock in the freezer, I find two nearly-forgotten black silkie chickens. If you've never seen a black silkie, they have jet black skin and white, fuzzy feathers. They're considered very healthful in Chinese cooking, and have an odd characteristic when you cook them. The dark meat cooks up black, and the white meat cooks up ash grey. I roasted these two cuties, rubbed in vermouth and dark sesame oil, sprigs of thyme inside.
In the pantry, I found some pasta that was a birthday gift from my girls. It's black squid ink tagliatelle from the isle of Lesvos (yes, that island - Greek uses the same letter for V and B). Add in some aromatics (shallot, celery, carrot), bay leaf, peppercorns, a guajillo chile and some giant chives, and you have my latest recipe. Wait for it... Black Lesbian Chicken Soup.
Minced parsley on top, a squirt of lemon juice, and it'll cure what ails you with a 70's porn soundtrack in the background. ;-)
