The joy of collard greens
Jan. 29th, 2007 05:45 pmHaving been raised in California, I never grew up with greens in my diet. Oh sure, Mom put some chard and beet greens in with the other hippie additives to the family menu, but they were fringe foods, not their own food group.
In Singapore, I got hooked on mustard greens, and in Florida, I learned collards. Last night I made a lovely pot of collards, fine enough to drink the pot liquor. ;-) Yum!
Smoked turkey wings (not quite as heavy as ham hocks, same smoky flavor) boiled for a few minutes, a little salt & sugar, then two pounds of washed and cut collards, simmer for about 45 minutes, enjoy!
