MOTO: Peas & carrots

quisletThe crab course has ended with me mopping up the last drops of buttered popcorn with a passionfruit noodle.
There have been some unusual and complex flavors in the meal so far...it's time for a palate cleanser.
Next is a squarish bowl that is completely empty except for a stainless steel spoon.
Resting in the spoon are dozens of little balls, half bright orange, half vivid green.
Dear sister pops the spoon in her mouth and starts flailing about, waving and stifling a hoot of surprise. It's a brain-freeze in action, a slurpee-induced headache in a top-notch restaurant. Along with the headache is an explosion of fresh flavor.
The spoon is loaded with frozen droplets of fresh peas and carrots, probably pureed into juice then dropped into liquid nitrogen to make perfect, spherical, vegetable "Dippin' Dots" just for you. Enjoy.
